Golden Tofu Scramble
500g firm tofu
1 heaped tsp. Massel vegetable stock powder
1 cup mushrooms sliced
¼ cup shallots chopped
1 large onion
2 medium tomatoes diced
½-1 tsp each of garlic, cumin, turmeric and coriander powder
1 tsp. celtic salt
¼ water
Saute the onions, mushrooms, tomatoes and shallots in ¼ cup water with the seasonings added.
Hand crumble the tofu into small irregular chunks and stir fry into the onion mixture till thoroughly coated in the seasoning.
